I'm sitting at the airport waiting to board the plane at the moment.. The flight's gonna be a bit longer than usual because I'm flying via Stockholm, so before I left the house I made sure to carb up properly and had this big bowl of porridge made of rice flakes with organic apple-cranberry jam, strawberries & wild strawberries that my sweet mom got me from the garden at our summerplace. YUM in my tum.

As many of you probably know by now, I love everything that has to do with liquorice. Yesterday I bought a bag of Fazer's soft liquorice and when I got home I realized I also had Panda's dark chocolate in the fridge... obviously I seized the opportunity and made my own little snack.
Here's how (warning; extremely difficult recipe):
1. Melt the chocolate
2. Dip the liquorice in the chocolate
3. Place them on a plate and let cool in the fridge
On midsummer morning I woke up at Robban & Vicky's place, then Soffe & Anttu picked me up and we headed to Soffe's summerplace in Sipoo. The rest of the gang started dropping in a few hours later and so we started the midsummer celebrations. We played games on the lawn, sung drinking songs, barbequed, had a sauna & late night dip etc. I had a really good time, thank you Soffe♥

Related to my last blogpost, we stopped to say hi and feed some horses on our way back from the Gullfoss waterfalls. Some of the horses were acting super weird and had hilarious haircuts, but they were all so beautiful and funny and we all enjoyed being close to them (I’m having animal withdrawals again...)

I was pretty sad yesterday after I'd found this mouse in the middle of the rode. When I first noticed him, he was just laying there with his eyes wide open but his legs were moving so I still had some hope that he would run along and continue his daily mouse-duties. I sat next to him and tried to talk to him and make him move by poking him gently with a flower, but after a while he became totally lifeless. I then made a little leaf burrito and placed him on the side of the rode. He wasn't injured or bleeding or anything so it was probably a snake or something that had stung/bitten him.. poor little mouse.
Life reminder: nature is cruel, people don't have to be.

Before our trip to Reykjavik, I had read something about Cafe Vínyl being a nice place with vegan options so I just wanted to check it out and I’m SO happy we did. Can you imagine my excitement when I saw what was written on the top right side of the blackboard?????! I had the snack platter with mixed olives, freshly baked bread, green salad, red pesto dip & hummus. V had the Kawai sandwich with guacamole, lime, fried mushrooms, caramelized onion & parmesan cheeze. EVERYTHING was insanely tasty. I took a few quick pictures of our dishes but the lighting was way off and didn’t do the food any justice. I recommend this place to everyone who loves eating great food and a unique atmosphere. Kaffi Vínyl is also a music café with lots of records, cool details and interior. As if there wasn’t enough reasons to visit already; they have live music performances in the evenings! A+++

I honestly had some of the best meals I’ve ever had in Reykjavik. All my lunches & dinners were pre-ordered in the restaurants we went to and they all had made such huge efforts for my meals. The lesson to be learned here is that if you’re going to a non-vegan restaurant to eat, always let the restaurant know about your diet requirements and you’ll definitely not get disappointed.
We had our first lunch in Restaurant Kopar, even though it’s a fish & seafood restaurant, they had this vegan creamy spaghetti dish with zucchini, chick pea balls, roasted cherry tomatoes with basil & nuts. It was one of my best food experiences ever.
My favorite drink during the whole trip was called The Tease at Slippbarinn Restaurant. It tasted like licorice-lemon candy and had a piece of licorice as a straw, need I say more?
All of the starters were top notch...
..as were the desserts.
This was my last dinner before we jumped on the bus to the airport on Saturday evening; delicious french fries, huge bowl of green pesto sauce, grilled mushrooms, onion, paprika, asparagus & corn on the cob, barbeque sauce, stir fried vegetables with kale and mushrooms & last but not least a crispy green salad with all kinds of veggies and nuts. To sum up: it’s NOT difficult to eat out as vegan, not even in a small town like Reykjavik.

Sooo you may or may not have noticed that there hasn't been a new podcast episode up for the last couple of weeks, and that's because we've gotten an extreme amount of hate and ugly comments so we've decided that it's just not worth it and that we're going to stop recording new episodes...
JUST KIDDING! I honestly don't know why I just wrote that haha, it was a complete and utter lie. We've only received inspiring, kind comments and some constructive critisism (seriously though where's the hate??), and the only reason there hasn't been a podcast in a while is simply that we've been super busy doing other stuff. Cat's in Thailand on the raw til' four bike fest, and I just haven't had time in between traveling in Thailand and Reykjavik to record anything. We're also trying to figure out how to record episodes together (long-distance style) so bare with us! We have a loooot of stuff we want to cover and heaps of topics to discuss!
I'm so bummed out because apparently Jane Goodall is having a public lecture thing in Reykjavik the 15th of June so I just missed her. She's such a huge inspiration, if you don't know who she is, I suggest you google her, now.
I'm back from Reykjavik! We arrived to Helsinki early yesterday morning and I took the bus straight to my parents' place in Pargas. I was really sleep deprived so my Sunday was pretty uneventful, I napped, ate, caught up on some vlogs on youtube and napped some more. Then i fell asleep at 9pm and woke up at 10.30am today, -feels sooo good to be well-rested!! Anyway, our mini-vacay in Reykjavik was incredible. We went to see Geysirs, waterfalls, lava and horses, we swam in the Blue Lagoon, walked around in the city which to my surprise was super small! We had amazing dinners, lunches & drinks and just enjoyed each others company and the beautiful, unique environment. I'm so grateful to be a part of V's wonderful family and everything that comes with it <3

Last night me and bf went for dinner at his dad's place, we had truffle risotto and it was top notch (can't expect anything else from a cook like him). We're now sitting on the plane on our way to Iceland to celebrate V's grandpa's birthday. YAAY!!!

I don’t know if I already mentioned this here on my bloggy (maybe just on my instagram account @jasminesminee) but this is honestly the best thing I’ve ever eaten. This mango sticky rice was made by the owner of Sunshine Restaurant in Srithanu. She told Cat that she has her own secret recipe that she doesn’t want to share with the world and I totally understand why... When she brought it to me my first initial reaction was like what’s all this yellow shit sprinkled all over my mango sticky rice?? but turns out that it was rice puffs and it was the most perfect topping you could ever imagine. This was one of those food experiences that I’m gonna look back at and remember forever.

My Thailand trip was so good in so many different ways, I got to hang out with my girls Cat, Emppu & Sandra, shop, relax & drive a scooter with Cecilia across Koh Phangan, I got to zen out and have some amazing alone time, hike, do some sightseeing, practise yoga, eat delicious fruits & food, meet cool new people and just have an incredible time. I'm super grateful for it all and can't wait until my next adventure (which is already next Thursday!!)

I've now started my travels back to Finland. I'm super sad to leave Thailand but at the same time I'm really excited because I've got some fun times ahead of me (another trip alert!!) :)))) Also, I miss eating my otherwise everyday veggies such as broccoli, cauliflower, carrots, peas, corn etc, I've also been craving nicecream, lentils, beans, potatoes & sweet potato lately, not that I'm AT ALL sick of thai food (<3) but I miss my greens & legumes. Anyway, I'm gonna enjoy my last watermelon (their pretty cheap and soooo tasty so I've been having at least two each day haha) and continue reading Ellen Degeneres' book.

This morning we were looking for a coffeeshop and luckily Cecilia happened to stumble across the perfect one!!
The owner overheard when we were talking about her vegan cakes that looked soooooo delicious, so when she brought out our coffees she also gave us a couple of carrot cake slices for free (which btw tasted incredible, so mushy and moist)
Yesterday we spent our last day in Srithanu walking around, hangin' in Zen beach with our hostel buddies, swimming in the turquoise sea with our hostel dog, visiting cool cafés and eating delicious food at Green Leaf Cafe & Mama Pooh's. After dinner, we took a tuktuk to Thong Sala, checked into our hostel, spoke to Cat and fell asleep like little piglets.
